Cheesy Sausage and Potatoes

This recipe is my take on funeral potatoes—minus the cracker topping and with the addition of sausage. You see, Bubba is not a fan of the cracker crunch, so he practically jumps for joy when I make this for dinner. He always asks, “Are you putting crackers on it?” and then holds his breath like he’s awaiting the results of a game show. When I tell him, “No crackers tonight!” I can almost hear the sigh of relief followed by a soft, excited “YES!” It’s like I just declared a holiday in our house!
